Roasted Chipotle Tacos

What to do with half a leftover cauliflower and  half a leftover sweet potato? Roasted Chipotle Tacos!

We tossed the cauliflower and potato with chipotle peppers in adobo sauce and a bit of olive oil, and roasted for about 25 minutes. The scent was heavenly, if a bit spicy. Top with chopped cilantro and serve on corn tortillas with fresh arugula, a bit of cheese, and a dollop of sour cream to cool down the heat. A side of cilantro lime rice finished off the meal.
