We had a bumper crop of kale this year. With unusually cooler temperatures, and lots of rain, there are more greens than we can keep up with. This week we made Creamed Indian Farmer Greens with some of the
harvest. Adding paneer (cheese), browned onions, and spices, as well as a finish of cream makes the otherwise tough kale smooth and savory. We served it with curried potatoes and saffron rice for a lovely summer meal.
